Caramelized Basmati Rice is the traditional accopaniment to a dhanak curry.The sugar is caramilized in hot oil before the rice is added,along with whole spices. Caramelized Basmati Rice is very easy to make and tastes so delicious. A delicious rice flavored with sweetness of caramelized sugar will leave you mesmerized.
Ingredients For Caramelized Basmati Rice
- Basmati Rice - 1 Cup
- Vegetable Oil - 3 tbsp
- Sugar - 2 tbsp
- Cardamom - 5 Nos
- Cinnamon Stick - 1 small piece
- Cloves - 4 Nos
- Bay leaf - 1 Nos
- Salt To Taste
- Hot Water - 2 Cup

Preparation For Caramelized Basmati Rice
- Wash the rice under cold running water until the water runs clear.Put it in a large bowl and pour over cold water to cover.Leave to soak for 20 minutes.
- Drain the rice thoroughly in a sieve(strainer),shaking it a little as you do so.Run the washed grains through your fingers to check that there is no excess water trapped between them.Set aside while you cook the other ingredients.
- In a large pan,heat the vegetable oil over medium heat.When the Oil is hot,sprinkle the sugar over the surface and wait until it has caramelized. Do not stir.
- Reduce the heat to low and add the spices and bay leaf.Allow to sizzle for 15-20 seconds,then add the rice and salt .Fry gently .strring for 2-3 minutes.
- Pour in the water and bring to the boil.Let it boil steadily for 2 minutesthen reduce the heat to very low. cover the pan with a tight-fitting lid and cook for 8 minutes.
- Remove the rice from the heat and leave to stand for 6-8 minutes.Fluff up the rice with a fork and serve.
Method For Caramelized Basmati Rice
1.Take 1 cup of basmati rice
2. Wash the rice under cold running water until the water runs clear.
3. Soak the rice in enough water for 20 minutes.
4. Drain the rice thoroughly in a strainer and keep aside
5. In a large pan,heat the vegetable oil over medium heat.
6. When the Oil is hot,sprinkle the sugar over the surface and wait until it has caramelized. Do not stir.
7. Reduce the heat to low and add the cardamom,cinnamon, clove and bay leaf.Allow to sizzle for 15-20 seconds8.Add the rice and salt .Fry gently , strring for 2-3 minutes.9.Pour in the water and bring to the boil.Let it boil steadily for 2 minutes then reduce the heat to very low.
