Keralites can never imagine a celebration without Payasam. Especially if its Onam, will have a different variety of Payasam. Here I am going to share with you a traditional and tasty payasam recipe using Rice and green gram.

Payasam, how many of you like payasam? I m going to tell you a small story, how I made the best payasam in my life. A few years back,  one Sunday morning my mother called me and told me that she is going to make a payasam with green gram and rice. I was surprised. I told her, mom, I don’t think this would be a good recipe you can make payasam with either rice or vermicelli because the combination of green gram and rice won’t taste well. But my mother didn't agree and she started arguing to me, why are you saying it won’t taste well? How do you know the taste? Have you ever tasted it? I couldn't answer any of these questions because I never made it or tasted it. My mother disconnected the phone without telling anything more. Maybe she was not happy with my prejudiced mind for a recipe that I never tried. I  was also a bit angry with her for ending the phonecall without saying anything. So I decided to try this payasam. I looked over the internet to find the recipes, but the recipes that I found are not satisfying. Finally, I decided to call my mother and asked her how to make the payasam. She told me the recipe and I started the cook. Finally, I made it and the taste was awesome. I never had a payasam like that before in my life. I called back my mother and said sorry. I learned a moral from this situation that happened in my life. Don’t argue with someone if you are not sure about it. So let us start to cook...
Cherupayar Ari Payasam Recipe


Ingredients For Payasam Recipe

  • Rice(Unakkalari / Pachari) - 150 gm
  • Green gram - 150 gm
  • Jaggery -350 gm
  • Thick Coconut Milk - 1 1/2 cup
  • Thin Coconut milk - 3 cup
  • Ghee - 2 tbsp
  • Cardamom Powder - 1tsp
  • Dry Ginger Powder - 1/2 tsp
  • Cumin Powder - 1/2 tsp
  • Cashew nuts
  • Raisins
  • Coconut Pieces - 2 tbsp

Preparation For Payasam Recipe

  1. Roast the green gram in a frying pan until it turns golden brown in color and then just grind it once for 2 seconds in a blender which makes it easy to remove the skin of green gram for getting the gram dal.
  2. Soak rice in water for 20 minutes and keep it aside
  3. Heat some water in a pan and once it boils, put the soaked rice into it. Once the rice is half cooked, mix the gram dal also with Rice. We can prepare the jaggery syrup by this time as it will take some time for the gram to get cooked well for the payasam texture.
  4. To prepare Jaggery Syrup, Add some water to the grated jaggery and heat it on medium flame until it begins to melt. Stir well until the jaggery fully melts and strain well
  5. Once it is ready, mix it with the half-cooked dal and rice. When the mixture boils, pour thin coconut milk followed by thick coconut milk once dal and rice are cooked well. Put some cardamom powder and dry ginger powder for taste and flavor and stir well. Do not boil after adding the thick coconut milk.
  6. Heat some ghee into a frying pan and stir fry cashew nuts, raisins, and thinly sliced coconut pieces until it turns a golden brown color. Switch off the flame and add to the payasam. Mix well.

4. Remove the skin of it

5.Boil water in a pan

6. Add 20 minutes of soaked rice

7. Add gram dal when the rice is boiled

8. Cover the lid and cook until the rice half cooked

9. Add jaggery and water in another pan

10. Stir well until the jaggery fully melts and strain well

11. Add Jaggery Syrup and mix it well

12. Add thin coconut milk and boil until dal and rice are cooked well.

13. Heat some ghee into a frying pan and stir fry thinly sliced coconut pieces, cashew nuts, raisins, and until it turns a golden brown color.

13. Reduce the heat to low, add thick coconut milk and mix it well

14. Add cardamom powder, cumin powder, and dry ginger powder and stir well.

15. Switch off the flame and add fried cashew nuts, raisins, and coconut pieces to the payasam. Mix well.
