There are many different ways to make mango pickles. This is such a simple and easy method to make a tasty mango pickle. This pickle prepared with raw unripe mangoes. Pickles, especially mango pickles are one of the most favorite side dishes for South Indians. Raw mango or tender mango is the most popular variety of fruit used for pickles.
My mother is an expert in pickle making and the kitchen will always have at least 2 variety of pickles. whole baby pickle and cut mango pickle are her favorites. My love is for cut mango pickle always. This pickle is made using coconut oil and the taste is very different when compared to other pickles. We can have this pickle with plain rice without any other side dish and mainly people have this pickle with rice porridge. So let’s start to cook.
Ingredients For Mango Pickle Recipe
Green Mango - 500 gmKashmiri Chilli Powder - 4 tbsp
Turmeric powder-1/2tsp
Mustard seeds-1 tsp
Fenugreek powder -1/2 tsp
Asafoetida powder-1/2tsp
Vinegar - 1 tbsp
Curry leaves
Green chili - 2 nos
Chopped Garlic - 8 nos
Chopped Ginger - 2 tbsp
Coconut oil - 1/2 cup
Salt
Preparation For Mango Pickle Recipe
• Choose raw fresh and unripe mango that is firm and has clear skin. Wash and let it dry mango thoroughly. Wipe it clean with a cloth.• Cut the mangoes into small pieces.
• Place them in a bowl and add the required salt. Mix it nicely with a spoon or hand, cover and keep it aside for 1 hour or more.
• Heat 4 tbsp coconut oil in a pan.
• Add 2 tsp mustard seeds, curry leaves, chopped ginger, green chili, and chopped garlic, fry it for a while on low flame then add turmeric powder and chili powder, Asafoetida and fenugreek powder.
• Add vinegar if the mangoes are not sour enough, no water is required as the water from salted mangoes will be enough. Fry it for 1 or 2 mint and switch off the flame.
• Add the chopped mango pieces with its water and salt. Combine well with the spicy gravy. Add more salt if required. Do not cook the mangoes again. Keep it aside for cooling and transfer it to a glass bottle.
Method For Mango Pickle Recipe
1. Cut the mangoes into small pieces
2. Add salt, mix it nicely with a spoon or hand, cover and keep it aside for 1 hour or more.
3. Add coconut oil in a pan.
4. Add mustard seeds
5. Add curry leaves
6. Add chopped ginger, green chili, and chopped garlic, fry it for a while on low flame.
7. Add turmeric powder, mix it well
8. Add chili powder to it and stir until the raw smell changes
9. Add Asafoetida and fenugreek powder, mix it well
10. Pour vinegar and stir well
11. Switch off the flame and add the chopped mango pieces, mix well with the spicy gravy
12. Keep it aside for cooling and transfer it to a glass bottle.
