Fried rice is one of my favorite recipes. there are many variations of this dish and this tasty fried rice you can find commonly in Malaysia, Singapore, Thailand, etc .. this recipe you can easily make at your home It’s very easy to make and you can have it without any other side dish. This easy spicy anchovy fried rice is known as nasi goreng kampung in Malaysia. It’s simple fried rice with Malaysian traditional taste that surely has a special place in any Malaysians’ hearts. Asian fried rice is very common in South Asian countries and there are many varieties.

 I am sharing here one of the simple ways to make tasty fried rice. When I tried this recipe the first time at my home. Everyone discouraged me telling me that it won't go well and once they tasted it they are all surprised and asked me when are you going to make it again. You can make this recipe in a different way and can add more vegetables and meat as you like. Let’s start to cook

Can you make fried rice with fresh rice?

Do not use freshly steamed rice as the rice grains have too much moisture content and too starchy for stir fry. The rice will clump and stick together in lumps. Use leftover steamed rice or “overnight” rice. It means rice that had been left overnight in the refrigerator as the rain grains are drier and have lost the moisture content.

Ingredients for Malaysian Style Fried Rice

Basmati rice - 1 cup
Boneless chicken - 100g
Spinach - 10 leaves
Anchovies- 1/2 cup
Chili - 8 nos
Chopped onion - 1 no
Green chili- 2 nos
Garlic- 3 cloves
Salt
Oil

Preparation For Malaysian Style Fried Rice

  1. Wash the rice well and soak it for 20 minutes. Boil water and cook the rice until done. Drain and allow to cool.
  2. Wash and clean anchovies. Remove the head and the black innards of the anchovies then wash and clean it very well.
  3. Grind the chilies, chopped onion, garlic, along with 2 tbsp anchovies and set aside.
  4. Heat oil in a pan and fry anchovies.
  5. Heat oil in a heavy-bottomed pan add chili paste and stir well.
  6. Add chicken slice, required salt, spinach, and stir until cooked.
  7. Add cooked rice, fried anchovies, green chili, and mix till the rice coated with the spice mixture.
  8. Transfer the rice to a serving dish.
